Pulled Pork Gyros

Gyros made with homemade pita bread, pulled pork and slaw! So good!

Pulled Pork Gyros

Yield: 4-6 Servings
Prep Time: 15 minutes
Cook Time: 4 hours
Total Time: 4 hours15 minutes

These gyros are loaded with pork, slaw and the perfect set of seasonings!

Ingredients

  • 1 TBSP Chili Powder
  • 2 tsp Oregano
  • 2 teaspoons cumin
  • 1-2 tsp cayenne (dependent on personal taste preferences)
  • 1.5 tsp salt
  • 1/2 tsp ground pepper
  • 2 TBSP Olive Oil
  • 4 peeled garlic cloves
  • 2 medium onions, quartered
  • 2.5-3 lbs pork loin
  • SLAW INGREDIENTS:
  • 3 TBSP yogurt
  • 3 TBSP mayonnaise
  • 1.5 TBSP apple cider vinegar
  • 1.5 tsp sugar (to taste)
  • 1.5 cups shredded cabbage
  • 2 carrots, grated and peeled
  • TOPPINGS:
  • Halved cherry tomatoes
  • Halved, seeded, peeled, diced avocado

Instructions

  1. Sear pork loin on all sides over medium high heat, about 3-4 minutes on each side.
  2. In a small bowl, combine spices: chili powder, oregano, cumin, cayenne, salt, and ground pepper. Season pork by rubbing the spices in thoroughly on all sides.
  3. Place onions, garlic and pork and 1 cup of water into a crock pot or roasting pan.
  4. Cook according to package directions or in a crock pot for 4-5 hours on high heat or 8 hours on low heat. Cook to an internal temperature of 175°F.
  5. After cooking is complete, shred meat and place back into the juices for 30 minutes.
  6. Combine the cabbage and carrots in a large bowl.
  7. Combine mayonnaise, Greek yogurt, apple cider vinegar and sugar in a small bowl.
  8. Pour over cabbage and carrots and stir well. Cover and place in fridge for at least an hour.
  9. Make and cook homemade pita bread.
  10. Top pita bread with pulled pork, slaw, tomatoes and avocado.
  11. Server and enjoy immediately!
  12. Repeat: Make another pulled pork gyro and enjoy! 🙂
